Mother: As we have said a number of times before, we like to watch our weight by low carb eating. I am not doing so well with it right now, sugar has a hold of me and won’t let go. lol But, when I am eating the way that makes me feel the best I seem to have a hard time with breakfast. I know that eating a good breakfast gets the body off to a great start, but there are times when if I have to eat another egg or piece of bacon I will scream. What I usually do when I get in that frame of mind is not eat breakfast. This puts my whole day off. I go to the gym four mornings a week and I never eat before going. So, by the time I walk back in the door after a 1.5 mile walk and a 50 minute spin class I am hungry but then my mind starts going through all the low carb things I have available and sometimes I am ok with what I have but other times not so much. One of my go to things is a low carb waffle with sugar free syrup. I try to stay away from the sugar free products but sometimes I just want something sweet for breakfast.
The recipe is:
1 tablespoon coconut oil
4 to 6 tablespoons unsweetened Almond milk, start with 4 and go from there
I mix the dry ingredients on a paper plate before adding to the wet
1 scoop protein powder
2 teaspoons coconut flour
1/2 teaspoon baking powder
Mix together with a fork and add to the wet ingredients, add more Almond milk as needed
As anyone knows that has cooked with coconut flour it soaks up the liquid so batter will be thick
My waffle iron doesn’t require greasing, so I pour the batter into the iron and cook for about 4 minutes
When done put on plate and serve.
This waffle has 345 calories, 8.8 carbs, 2.4 fiber and 25.7 protein. Counts depend on your protein powder. The coconut oil can be left out. I use it because I try to consume 3 tablespoons of it a day. I have been using this waffle recipe for so long I am not sure where it came from.
Another breakfast food I really like is from Low Carb Yum. She has a recipe for Pepperoni Pizza Muffins that are really good. You can eat them hot or cold.
